Make your own flavoured gin drink with Pearl & Ruby in Spalding

"Get ahead on Christmas gifts... Now is the perfect time to create your own homemade flavoured drinks to pass on as gifts or just to add to the festive table!

"We have made fig gin as my tree gave us a bumper crop this year, but similarly this can be done with raspberries, damsons, rhubarb or even blackberry and apple," writes Kayleigh Ayre, of Pearl & Ruby.

You will need:

Fresh figs

London Dry Gin

Large Kilner jar or jar with tight fitting lid

Glass bottles with caps

Muslin cloth



Pour the gin into your large container. We opted for London Dry Gin because it has a more neutral flavour, so it is able to be infused and carry other fruity flavours very well.

Quarter your figs and add them to the gin. A little added sugar is optional but figs are naturally very sweet.

Seal the jar, shake and store in a cool, dry place for up to two weeks. Shake the ingredients every few days.

Strain the infused gin through a muslin cloth to remove any fruit or sediment.

Decant into clean, sterilised glass bottles with caps and seal. These bottles can be stored in the fridge for up to a year.

Attach a rustic label with twine and give as a gift.

Fig Gin

Champagne or Prosecco

Garnish with cranberries and an orange twist
