Iconic Spalding butcher George Adams share art of making handraised pork pies

Connoisseurs across the country, including television presenter Piers Morgan, are enjoying handraised pork pies which are produced by an iconic Spalding butcher.

Rachelle Chew is celebrating her second anniversary of working with her committed team at George Adams Butchers with a special offer for Spalding Guardian readers.

Since taking over the helm on July 20, 2018, Rachelle and the dedicated team have redefined the business with a rebrand, the introduction of click and collect along with a delivery service.

It also produces products for prestigious names like Fortnum and Mason.

Following on from the success of last week’s burger offer, Rachelle and the team are offering a free snack pork pie for readers who present the voucher, which was published in the last edition of the Spalding Guardian.

Pork pies have been made at the butchers in The Crescent since 1910, when it was founded by the Adams family, and the team continue to follow this tradition with their hand raised pies.

Rachelle said: “There is a real art to baking a handraised pork pie and it is an incredible skill which has been perfected by our team over the years.

“Our pork pies are traditional as they are made with hot water crust pastry but they have evolved to include several core flavours, including Hunstman, Pork Cheese and Pickle and Chilli flavours to name just a few.

“There are 16 stages to creating our hand raised and hand finished pork pies.”

Skilled bakers take two days to create a handmade pork pie, which starts with creating the hot water crust pastry.

It is allowed to stand overnight to settle before being filled, lidded and crimped.

Rachelle, who is looking for more customer service staff due to customer demand, said: “Pork pies along with picnic foods like Scotch Eggs are having a revival.

“We produce a wide range of pork pies which are topped with fillings like Italian roasted onions, piccalilli and cranberries at Christmas.”

Each week the team bakes over 10,000 pies, which are sold locally as well as being sent as gifts to Wales, Scotland and Essex. The skilled team is also able to create bespoke pies to celebrate special occasions such as birthdays.

This week also marks the launch of The Only at George Adams Pie of the week with the divine Chicken, Leek and Ham pie.

Three additional flavours will be following over the coming weeks, which will be promoted over the George Adams Facebook account and live recordings with Rachelle.

She said: “This week is really exciting as we are launching the Only At George Adams range after listening to our customers.

“I am sure that they will be pleased with the final products.”

To celebrate the second anniversary, Rachelle and the team are offering three weeks of special offers for Spalding Guardian readers.

This week readers who take the voucher to the store will enjoy a free snack pork pie with a minimum spend of £5. Readers are advised to keep this and the previous voucher, which must be signed, for the final week when they can receive 10% off their shopping with a minimum spend of £10.
