January is typically a time when many people consider eating slightly more healthily than they have been doing.

South Holland District Council has just the thing to help: free community cooking classes.

The six-week Healthy Cooking Course starts on Friday, February 7.

The course is held each Friday until March 21, apart from February 28, at Lime Court Community Centre (10am to 12noon).

The course will cover seafood, pasta dishes, recipes low in sugar, low fat sauces, batch cooking and generally low fat, healthier options.

Issues covered will be cooking on a budget and basic nutrition.

One of the recipes covered in a previous course is Winter Vegetable Soup, a healthy and hearty soup dish.


1 large leek

2 medium potatoes

4oz (120g) white cabbage

2 large carrots

½ stick celery

1 onion

2pts (1ltr) warm vegetable or chicken stock

Sea salt and freshly ground black pepper to taste

2oz (60g) margarine or butter


Wash, peel and rewash the vegetables.

Cut the cabbage, carrots, celery, leeks and onions into a uniform, medium dice.

Melt the margarine in a pan, add the chopped vegetables and cook without colouring for five minutes.

Add the warm stock, bring to the boil and simmer for 20 minutes.

Cut the potatoes into dice, add to the soup and simmer for a further 15 minutes.

Season to taste and serve, or blend to produce a thick, wholesome soup.

Serve sprinkled with chopped parsley.
