A Gedney Dyke couple plan to tempt the taste buds of Spalding’s lunchtime crowd by opening a new sandwich bar in town.

Liane (35) and Lee (36) Donovan have applied to convert a former barber shop in Red Lion Street into a takeaway, with a decision on whether they can go ahead expected in the next four to six weeks.

Our dream was to move up to Lincolnshire and open a sandwich bar the way that we wanted it to look

The couple, from Kent and London respectively, only moved to south Lincolnshire three months ago.

But Lee’s catering experience, having trained at Butlers Wharf Chef School in London, and Liane’s skills as an ex-teacher have led the couple to believe that they have a winning formula to attract customers.

Liane said: “Our dream was to move up to Lincolnshire and open a sandwich bar the way that we wanted it to look.

“So after doing a bit of exploring in different areas and a bit of research, we thought the shop in Red Lion Street was the right size, it’s near Boston College, Market Place and not too far from the river as well.

“We hope that our planning application can go through pretty quickly so we can move in to decorate and get all of our equipment inside the shop.”

Liane is aware that Donovan’s, the intended name for the sandwich bar, will be up against stiff competition from other takeaways in Spalding town centre.

But she said: “We hope to be much better than all the rest by offering good-quality food, with Lee’s background as a chef.

“Everything will be fresh, home-made and exciting, with really good flavours.”
