Amici Restaurant in Spalding offers a warm, friendly dining experience and a taste of Italy.

You will need

Garlic, 2 aubergines, 2 x eggs, 250g grated Parmesan, 2 fresh mozzarellas diced, bunch flat leaf parsley chopped, fresh basil leaves, sprig fresh oregano or tablespoon of dried, plain flour, extra virgin olive oil

Method

Cut aubergine into 1cm slices and after resting dry and coat with flour. Beat the eggs with a dash of milk, Parmesan, ground pepper and parsley. Place slices of aubergine into egg mixture and gently fry in vegetable oil until light golden brown then put on kitchen roll. Place a good layer of tomato sauce in base of baking dish and layer the sauce and fried aubergines sprinkled with Parmesan cheese, fresh mozzarella, basil and parsley. Finish with good topping of sauce and Parmesan. Bake at 180 degrees for 30-45 minutes.
