SIX students at Holbeach have created a new icecream flavour as part of their course work.
Distance learners on the foundation degree in food manufacture used locally-sourced elderflower cordial to create their new treat.
The team, helped by experts including Richard Ladbrooke of Holbeach-based Laddie’s, conducted market research and carried out kitchen trials before scaling up their recipe into full production.
They also carried out focus groups and taste analysis. Student Shaun Tilney said: “The task has been challenging, but fun.”
Visitors to the University of Lincoln’s stand at the Lincolnshire Show on June 22 and 23, will be able to sample the ice cream.
